Peachy Pie Recipe

The Crust

1/2 Cup Salted Butter (diced & chilled)

1 1/4 cups flour

1/4 teaspoon salt

3 tablespoons ice water

Combine flour and salt in a food processor- pulse once to mix. 

Add butter and process it until it is coarse crumbs. 

Add 2 tablespoons of water and pulse a few times. Add another tablespoon of ice water and pulse until it becomes a ball. If your mixture is too dry, add another tablespoon of water.

Next, turn out the dough onto a floured piece of parchment paper. Press the ball of dough into a disk and roll to 1/4 inch thickness. Then, flip and rotate the dough as you go so it doesn't stick to the paper.

Roll out the dough to a 10-12 inch circle.

The Peaches

2 peaches, sliced (with skin on)

2 tablespoons sugar

1 tablespoon butter (in slices)

1 teaspoon cinnamon 

1 pinch nutmeg

1 egg

Pile peaches into the center of the dough. Sprinkle 1 tablespoon of sugar, the cinnamon, and nutmeg over the peaches.

Dot the peaches with squares of butter. 

Fold up the sides of the dough.

Beat 1 egg and brush it on the pastry. 

Sprinkle the remaining 1 tablespoon of sugar over the pie. 

Bake at 425 degrees for 15-20 minutes.
