The best way to thank Mom....brunch!
1/2 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
4 cups grated Colby Jack cheese
1/2 cup melted butter
1 -4 oz hot jalapeno slices
2 cups cottage cheese
This is one of my mom's favorite recipes so it made perfect sense to make the California Egg Bake for Mother's Day Brunch.
Preheat the oven to 350 degrees. Then use a 13x9" baking pan. Beat the eggs until they are light and frothy. Next, add baking powder, flour, salt, Colby Jack cheese, melted butter, jalapenos, and cottage cheese. Stir until well mixed. Transfer to baking pan and bake for 30-40 minutes or until it is puffed and golden. Serve with salsa for a kick!
